PASTRY
FRIDAY, JULY 22 @ 11:00PM
With bread, biscuits and cakes complete, the bakers must now prove their pastry skills. For the signature challenge, the bakers make a frangipane tart in two hours, the challenge being that it must be open-topped and use shortcrust pastry. In the technical, the bakers strive to make flauones – a cheese filled pastry made in Cyprus. Vol-au-vents are set as the Showstopper – the bakers must make two types, all using their own puff pastry – in three hours and forty five minutes.
ALTERNATIVE INGREDIENTS
FRIDAY, JULY 22 @ 7:00PM & 12:00AM
The remaining bakers face baking challenges without sugar, gluten or dairy. This episode has a theme of using alternatives for ingredients usually used in baking. For the signature bake, the bakers are given the challenge of baking a cake, but without using sugar. For the technical bake, the challenge is to make twelve identical gluten-free pitta breads in two hours. In the showstopper, the bakers must make an ice-cream roll using dairy-free ice-cream.

Conflicting stories arise when one of the band members is injured in a violent attack. Having stumbled upon the scene of the crime, Louis expresses his suspicion of Julian to photographer Sarah as the pair form a relationship.
